What would you say if we told you that a place has recently opened in Plovdiv, the concept of which recreates the comfort of a home living room, and the hosts welcome their guests with a refined dinner, served in a few steps?

Bistro Blyan has been on the gastronomic map under the hills for only a month, but it has already attracted fans of precise cuisine and careful presentation. It began as a shared dream of Diana and Vasil – young people united by their love of cooking. They met at the Institute of Culinary Arts in Varna, and their professional path took them to some of the most prestigious kitchens in Europe. In Italy, they learned to respect every ingredient, and in Belgium, their idea for a cuisine that is both calm, bold and deeply connected to nature was born. After years of experience, they returned to Plovdiv to tell their interpretation of Bulgarian products.

Their cuisine follows the seasons, works with local producers and is guided by the farm-to-table principle, with a focus on fermentations, textures and pure flavors. The atmosphere at Blyan is reminiscent of a dinner at home – quiet, warm and unobtrusive. The hosts cook and serve themselves, because they believe that the true experience is born in the connection between the kitchen and the table. The space is small, which naturally invites guests to slow down and immerse themselves in the details of each dish. Often the dinners take on an almost intimate character – an experience in which you can’t help but feel special.

The menu changes with the season and follows the rhythm of nature and the capabilities of local producers. They work with small quantities and carefully selected products to build a complete taste journey. A new spring menu is currently on offer, which, as they told us, will develop in several successive parts.

Dinner is held within a single service, starting at 7:00 p.m. No special occasion for a reservation is needed, here every day can become one.
